img Ingredients

  • 37 oz. cauliflower florets
  • 2 cloves garlic minced
  • ¼ cup chopped fresh parsley or dried
  • ¼ cup chopped fresh dill or dried
  • ½ cup plus 2 tablespoons fine breadcrumbs
  • 1 ½ teaspoons baking powder
  • ¾ teaspoons sea salt
  • ½ teaspoon cayenne pepper
  • ¼ teaspoon onion powder
  • 2-3 eggs

Recipe

  1. Cook cauliflower in a large pot of boiling salted water until very tender, about 10 minutes.

  2. Drain and cool.

  3. Place garlic and half the cauliflower in the food processor and blend until smooth.

  4. Add remaining cauliflower, parsley and dill.

  5. Pulse until cauliflower is chopped and mixture is still slightly chunky.

  6. Transfer to large bowl.

  7. Mix in breadcrumbs, baking powder and seasonings.

  8. Beat two eggs in small bowl and add to batter.

  9. If batter is dry, add the third egg and mix into batter by tablespoonful until a moist but not runny batter forms.

  10. Preheat oven to 375.

  11. On a greased baking sheet, place mixture in rounded tablespoons, about 1 inch apart. Bake until browned on the bottom.

  12. Flip and cook until the other side is browned too.
